Memorial Day

With the long weekend ahead of us, let us not forget why we celebrate Memorial Day.  It's a wonderful day of remembering those who have paid the ultimate price while serving in the United States Armed Forces.

You may not be aware that it originated long ago - right after the Civil War to commemorate the Union and Confederate soldiers who died.  And over time, the holiday has been extended to honor ALL Americas who have lost their lives while serving.
 
 
 
So, please take a few minutes to remember - and to give thanks for - all of  those who have given their lives to guarantee our freedoms.

 
As the 'unofficial' start of summer, Memorial Day also has become a time to host picnics, BBQs and time with family and friends---and that means some good, down home cookin' in this neck of the woods! If you are looking for a great dessert recipe (that just happens to be really, really easy) here's one of my favorites.  It's red, white an blue theme provides a patriotic spin:

Red, White and Blueberry Banana Pie:
1 pie shell, baked and cooled
1/2 cup sugar
1 8 oz. block cream cheese
1 carton Cool Whip
2-3 bananas
1 can blueberry pie filling
Fresh raspberries for garnish

Slice bananas and fill cooled pie crust
Cream together sugar, Cool Whip and cream cheese - spoon over bananas
Top with pie filling (you will not use the whole can), and garnish with raspberries
Chill until ready to serve

Great post, Laurie! It is so important to stop and think about all those who sacrificed so much for us. So many of us just get caught up in the holiday fun, cook-outs, beach outings, etc. and forget what it's really all about! Thank you! Linda
